Add poultry to skillet; cook 2-3 a few minutes on each side until browned lightly. Remove poultry from skillet, and drain on paper towels. Wipe skillet dried out with a paper towel. Add more mushrooms and cook 2 minutes, stirring frequently. Remove mushrooms from skillet, and reserve. Recoat skillet with Pam. Place over med-hi high temperature until hot. Add natural garlic and onions; sauté 1 minute. Mix in thyme and wines. Add reserved poultry. Bring mix to a boil. Cover; reduce high temperature, and simmer 25 a few minutes.
